Ingredients:
- 2 cups (250g) all-purpose flour
- ½ cup (60g) rice flour (for extra crispness)
- ¾ cup (150g) caster sugar
- 1 cup (230g) butter, cold and cubed
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- Optional festive additions:
- Finely chopped cranberries
- Orange zest
- Mixed spice
Instructions:
- Preheat oven to 325°F (165°C).
- In a food processor or large bowl, combine flours, sugar, and salt.
- Add cold butter cubes and vanilla extract.
- Process or rub with fingertips until mixture resembles breadcrumbs.
- Press mixture firmly into an 8-inch square baking pan or shaped shortbread mold.
- Prick surface all over with a fork and sprinkle with extra sugar.
- Bake for 35-40 minutes until pale golden.
- Cut into fingers while still warm, then cool completely.
