Creating gingerbread in a well-designed kitchen is a joy that every home baker should experience. This tried-and-tested recipe has been perfected in our display kitchens, ensuring success whether you’re a beginner baker or a seasoned pro.
Ingredients:
For the Perfect Gingerbread:
- 350g plain flour, plus extra for rolling
- 1 teaspoon baking soda
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- 125g unsalted butter, softened
- 175g soft light brown sugar
- 1 large egg
- 4 tablespoons golden syrup
- 1 tablespoon black treacle
- Zest of 1 orange (optional, but adds wonderful festive flavor)
For the Royal Icing:
- 400g icing sugar
- 2 egg whites
- 1 teaspoon lemon juice
- Food coloring (optional)
For Decorating:
- Selection of candies
- Edible glitter
- Silver balls
- Writing icing in various colors
Equipment Needed:
- Large mixing bowl
- Electric mixer (hand or stand)
- Rolling pin
- Gingerbread person cutter
- Baking sheets
- Baking parchment
- Cooling rack
- Piping bags
- Various nozzles for decorating
Instructions:
- In a spacious kitchen workspace (like those displayed in our HomeFit UK showroom), sift together the flour, baking soda, and all the spices. The beauty of our kitchen designs is that you have plenty of space to organize your ingredients efficiently.
- In a large bowl, cream together the butter and sugar until light and fluffy. This takes about 3-4 minutes with an electric mixer.
- Beat in the egg, followed by the golden syrup, treacle, and orange zest if using.
- Gradually add the dry ingredients to form a dough. Don’t overwork it – mix just until combined.
- Divide the dough into two portions and wrap in cling film. Chill for at least 2 hours or overnight.
- When ready to bake, preheat your oven to 180°C/160°C fan/Gas 4. Line several baking sheets with parchment.
- Working with one portion at a time (keeping the other chilled), roll out the dough on a lightly floured surface to about 5mm thickness.
- Cut out your gingerbread shapes and place on the lined baking sheets, leaving space between each for spreading.
- Bake for 10-12 minutes until lightly golden at the edges. They should still be slightly soft in the middle – they’ll firm up as they cool.
- Leave on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
For the Royal Icing:
- Whisk the egg whites until frothy.
- Gradually add the icing sugar and lemon juice, beating until stiff peaks form.
- Divide into portions and add food coloring as desired.

Troubleshooting Tips:
- If dough is too sticky: Add a little more flour when rolling
- If cookies spread too much: Chill the cut shapes for 10 minutes before baking
- If icing is too stiff: Add drops of water
- If icing is too runny: Add more icing sugar
